Entourage is horrible, IMHO. As stated, Mail, which is included with your Mac is quite stable. It can get POP3, IMAP and Exchange 2007 based email. On my previous Macs, I would have to use the old Outlook 98, then later just Outlook Web Access to get to my company's Exchange server. But ever since Mail could connect to Exchange servers, that's all I use now. (The included Mail, iCal and Addressbook all connect to Exchange servers so for basic things, they are quite sufficient. I use all three as a pseudo-Entourage.)
The only thing that you 'need' Entourage for is things like accepting appointments sent from Outlook, particularly if your mail is Exchange based. Me personally, I just manually create and reply to appointment requests rather than deal with Entourage.
If you must have the full organizer functionality of Entourage, Microsoft finally released Outlook for Mac again. (Entourage was supposed to replace Outlook, but we can see how well that went. 😟 ) It's part of the new [Office 2011 Home and Business suite|http://www.microsoft.com/mac/products]. I'm told it has nearly all the functionality of Outlook for Windows and is significantly better and more stable than Entourage. But if the only thing you use Entourage for is email, then just switching to the built-in Mail is a better choice. (IMHO, it's still a better choice even if you have to copy your Entourage calendar and contacts to iCal and Addressbook. 🙂 )
